Vegan Dessert

So far, we have talked about vegan appetizers and snacks, breakfast, lunch, and dinner. Now it’s time to talk about the most popular course! Let’s dive into vegan dessert. 🌱

Vegan baking is a bit different without the use of eggs. Butter and milk, however, are easily substituted since there are vegan replacements available in grocery stores. (Earth Balance and Miyokos are my favorite vegan butters).

Instead of eggs, common replacements for baking include aquafaba, flax egg (ground flaxseed mixed with water), mashed banana, silken tofu, and applesauce. For more information on vegan baking substitutes, check out my Pinterest page here.

Black Bean Brownies

If you have never tried black bean brownies, they have a different texture than regular brownies, but are actually quite good!

All you need is a food processor and a few ingredients; within minutes, you’ve got a delicious dessert!

I prefer really moist cookies, so I add extra pumpkin puree. 

Chocolate Lava Cake

You guys, I cannot emphasize enough how much baking stresses me out. Like majorly. Chocolate lava cake is my absolute favorite dessert of all time, and I’ve always struggled with making it well–both before going vegan and with a vegan recipe. It’s so much better when someone else makes it!

Years ago at my bridal shower hosted by my husband’s aunts and grandma, they made chocolate lava cake for dessert. It was the best I’ve ever had. I still dream about that cake! Hopefully someday I can recreate a vegan version that is just as good. 🤞

Aquafaba Whipped Cream

Did you even know this was a thing?? Aquafaba is the liquid in canned chickpeas. When whipped with a hand mixer, it eventually develops texture and form like a meringue or whipped cream. Crazy, huh?!

Personally, my husband and I preferred the coconut whipped cream over the aquafaba. I probably won’t be making the aquafaba whipped cream again, but I’m anxious to try aquafaba in new ways. It really is a lot of fun to play around with new cooking techniques. 🤗

Date Caramel Sauce

Umm, yum!! I had never cooked with dates before, and the caramel sauce turned out great! Really delicious and super easy to make.

The perfect combination of tart, sweet, and refreshing! 🍋

    WOW! These look amazing! You underestimate yourself! Deep breath, relax, and BAKE!! Pumpkin chocolate chip cookies-YUM, lemon sorbet-I’m going to try this when my daughter arrives. I’m thinking some fresh raspberries on top!!! I’ve heard of aquafaba-and quite frankly, I love the name so much I want to make it-ha-but I always drain the chickpea juice when I make hummus. I just can’t imagine making that into a whipped topping. Though it does look it whipped up nicer than the coconut milk. I’m not a coconut lover, can you taste the coconut? What’s your fave ice cream brand in vegan? What’s your favorite substitute for eggs and butter? If using banana does it have a banana taste? Applesauce-do you buy the unsweetened?

    1. Fresh raspberries on top of lemon sorbet would be amazing!
      The aquafaba was fun to experiment with (and say!) but we didn’t care for the whipped cream version of it. 🤷‍♀️ I do like to add aquafaba to my homemade hummus sometimes though instead of olive oil.
      I hate shaved coconut (meat), but I absolutely love coconut milk and coconut cream. To me it doesn’t have the same taste. Coconut milk is a much milder flavor, especially when cooking with it.
      My favorite brand of plant based ice cream is Nada Moo (also fun to say haha!)
      Since I rarely bake, I am by no means an expert…I wasn’t an expert before going vegan either though! 😂
      For plant based butters, I recommend Earth Balance or Miyoko’s; they taste just like regular butter.
      I normally use flax “eggs” as egg substitutes in baking. In my opinion, the taste of banana overpowers everything, especially when baking. But I know a lot of people who bake with banana and love it. It’s just not for me. I use organic applesauce with no added sugar.
