Reflection & Gratitude

On my birthday, I like to take time to reflect on the past year. And that time has come as another birthday approaches tomorrow. (Is it just me or are they coming more frequently these days?! πŸ™ˆ ) Birthdays are a great time to reset your mind, redirect your focus, and reflect on all of the blessings in your life. Practice making time for reflection and expressing gratitude. ❀️

A lot has changed for me in the past year. The most significant change has been adopting a plant based diet and vegan lifestyle. 10 months today!! πŸ™Œ

A second significant change in my life has been my career. Late last year, I realized I was losing my passion for nursing. I quit my job in a toxic work environment and focused on rediscovering my passion in life.

After lots of consideration and prayer, it became clear that I could help others experience the positive benefits of a plant based diet. And I could still do what I love–taking care of people (just in a different way than being a nurse). Thus, A Case for Plant Based was born. 🌱

This past year, my husband and I have also made some fun trips and spent quality time with friends and family.

Then coronavirus hit and lockdown ensued. In 2020, collectively we have navigated and adapted to the new normal under a pandemic wreaking havoc around the world.

During these times especially, it’s vital that we focus on the positives and everything we have to be thankful for. Love deeply and don’t take anything for granted. ❀️

Stay optimistic and focus on the good. Remain hopeful for a better tomorrow and a healthier mind, body, and spirit within yourself. πŸ’—

Take time to reflect and start a gratitude journal. We all need gentle reminders from time to time, and what better words to read than your own.

Today I am especially grateful for:

  • Health
  • My husband’s job
  • How emphatically a vegan diet has changed our lives for the better
  • New friends and connections made in Kansas City
  • Extra time to spend with the hubby and Ellie while both working from home
  • Rediscovering my passion and launching a new business endeavor
  • This 50th article of the blog! Woohoo!
  • All of you and your support πŸ₯°

Much love and gratefulness,

Erica

  1. HAPPY BIRTHDAY!! Enjoy these young days, they’re a blessing!! πŸŽ‚πŸŽ‰πŸ’πŸ₯‚
Reflection has been significant these past days/weeks: Much younger days when life was so innocent. When people seemed to really love and care about each other. When families made it a priority to go to church. When people said hello back when you greeted them with a hello. When people respected authority.
    In gratefulness:
My husband and his employment of 40 years!
My two beautiful children who love and serve the Lord!
    For their loving spouses!
    Two beautiful, healthy granddaughters!
    Family!
    Health of my family!
Thankful that I can walk anywhere I want to go!
For a beautiful day that I can sit out and read your blog!
For wonderful neighbors and their two precious boys!
    A free country!!
And as I reflect on a day 35 years ago. The day before our firstborn would come into our lives! No one could ever begin to tell you the love you will have for that child! Though many miles separate us, and this covid has put a damper on our visits, nothing will ever come between my love for her!!
HAPPY BIRTHDAY, to my beautiful daughter!! LOVE, LOVE, LOVE YOU!
Until we meet again!!!! πŸ˜˜β€οΈπŸŽ‚-vegan, of course!

    1. Aww thank you! White dress is from Target, and the colorful dress and bathing suit were super cheap on Amazon. πŸ€·β€β™€οΈ
