Blueberry Pancakes
One of the most frustrating things to me is that people associate a plant-based diet with depriving yourself of “normal” foods. That’s just not the case!
When we first converted to a plant-based diet, I made it my mission to find as many vegan-friendly recipes on classic dishes as I could. Because I have tried to keep things as “normal” as they can be, it’s made the transition that much easier. By finding really good plant-based alternatives, it doesn’t feel like we’re missing out! We don’t feel deprived and can enjoy dishes that we used to eat.
It’s all about re-invention. Retraining your brain. Finding your new normal.
I’m a vegan, and I don’t feel deprived of any specific food. I don’t miss eating anything in particular.
I’m grateful for all of the people who have developed vegan-friendly versions of my favorite recipes. Like pancakes!
Silken Tofu Pancakes with Cacao Nibs
I like pancakes plain or made with blueberries, vegan chocolate chips, or cacao nibs. (Just don’t make the same mistake I did and taste cacao nibs by themselves. Trust me, they’re much better in pancakes!) Top your pancakes with pure maple syrup, any type of nut butter, fruit jam, seeds, nuts, or your favorite fruit.
